Chocolate Chunk Muffins




Hey! Where's the chocolate chunks? I sliced one of these babies open and no chunks! I sliced two of 'em and nothing. I feel like Yukon Cornelius. Every time who threw his pick in the snow and licked it...Nothing! Phooey! These muffins were light, moist and fluffy. I'd love to make them again with some more chocolate chunks. Date Nut Bread



Hello! A little late but none the less, done. I just couldn't wait one night, one day to slice this bread! Upon tasting it, I now wish that I had slice up whole dates. I used chopped dates, which were very soft but a bigger date would've been grand. This was easy to whip up, so I'll have to try again. I made three small loaves from half a recipe. Not too shabby! Thanks to Mary of Popsicles and Sandy Feet for a yummy bread!

Blueberry Brown Sugar Plain Cake







So, it looks like a lot of folks found the egg whites to be a thorn in their side. On this hot summer day, even with air conditioning, I'm not sure what wouldn't be a little irritating! I have yet to taste this little guy but the blueberries sound like a real winner. I hope the cinnamon does a nice job in complementing the brown sugar and berries. I didn't have the size pan required so I used my 9 inch square. Interested to see how many folks had a 11x7.... Wanted to show a pic of the bottom of my cake, yup blueberries down there!!! Overall, this was a nice light and tasty cake! Thanks to Cindy of Everyday Insanity for finding a timely pick! This was very enjoyable right out of the oven!

Maple Cornmeal Biscuits




El-Yumo! Loved these, and so easy to put together. Love the sweetness from the maple syrup. I sliced a few up and spread some raspberry jam on. Really, really good! I used a tablespoon to measure out the biscuits but still ended up with over 24..... hmm... Thanks to Lindsay of A Little Something... Sweet for a yummy treat!

Brown Sugar Bundt Cake









This was pretty quick and easy to put together. I say that only because it's not often that I don't get start crackin eggs til after 9 p.m. So, with that being said I should have a cake out of the oven by 11 p.m. I chose to go with a red pear and craisins tonight. I'm not big on raisins and didn't have any prunes on hand although, I'm sure the prunes would've been lovely. I can't wait to taste this cake! I tasted the batter a few times and the brown sugar was nice and smooth. Thanks to Peggy of Pantry Revisited. Everyone who baked this cake seemed to absolutely love it. Can't wait to try it!!!!



Well, as you can see.... It stuck a little, and yes, I grabbed a fork and started picking at those little pieces and gobbled them up!

Basic Marble Loaf Cake



Well, after I saw that someone halved their recipe and made muffins, I decided to try that too! I actually used my mini muffin pan and those little babies baked up real fast....too fast. So, their a little over baked but still tasty! I made the orange version and suprisingly like them more than I thought I would. Hope everyone had fun making these! Cornmeal Shortbread Cookies







I love, love, love the crunch of these cookies! The only unfortunate part for me is I forgot to buy a lemon and I had in the fridge this powdered california lemon peel from Penzeys. Didn't like it. It taste like I put the pith of a lemon in the cookies versus the rind. So, there's a little bitterness at the end. Bummer. But this is definitely a keeper... aren't they all? A Tourtely Apple Tart


Unfortunately, I didn't read the recipe until this morning before I left for work and I didn't get home from work until after 8 p.m. My tart is a work in progress. One note that I made on this recipe is not to make a double crust in my food processor. It's a 7 cup processor and one batch is plenty in there! My dough came out over processed. We'll see how it bakes up.




I used Pink Ladies for the apples. I loved one persons comment on how this tart reminded them of McDonalds apple pie! If that's the case, my husband will devour it! I'll have to wait til tomorrow to find out! Thanks Jeanette from Whimsical Cupcake for the treat!

Pecan Powder Puff


Well, actually I did walnut powder puff cookies. It's a little late. Got caught up watching a movie with hubbie and I just popped them in the oven, hence the picture of raw cookies! Honey Nut Brownie


Between yesterday and today I've been reading everyone's posts and I didn't get excited about making this brownie. I took the time to pick out what I thought would be a good tasting honey. I wanted something different and I saw white truffle honey. I shouldve read the side of the jar and found out that it was for savory foods and not desserts. Back to the store I went and picked out a wild flower honey. I must say, I liked this dessert more than I thought I would. I think it's important to use a bittersweet chocolate with at least a 70% percent cocoa to avoid any undesired sweetness. Although these were very sweet, I didn't mind because they were "honey sweet", if that makes any sense! These came together quite well and took about 55 minutes in the oven. I'll take some to work tomorrow to get a few more comments.

Citrus Currant Sunshine Muffins


Well, it's nice to do a little bit of baking. I've fallen behind and literally have had ingredients on my counter for the past few recipes for weeks now! I made the corny corn muffins but they got eaten up before I could take a picture!!!


This weeks selection comes from Lauryn of Bella Baker. Such perfect timingfor a lovely spring muffin. I was asked to be a part of a women's health conference and bring some healthy muffins. These will be perfect along with a few others we've done. Mini muffins are perfect for this treat! I also added a lemon icing on them as well.

Great Grain Muffins


Christine of Happy Tummy selected a wonderful, healthy muffin. I chose apricots and walnuts as add ins. This was a yummy muffin that needed nothing more straight out of the oven. Maybe tomorrow I'll toast one with some cheddar cheese - hmmmmmmmmmm.....

Nutty Chocolately Swirly Sour Cream Bundt Cake


It's been way too, too, long but so good to be back! Moving into a new home that requires a lot of renovations has been and continues to be an incredible experience! And when your husband breaks his leg in the midst of the move - Wow!
