I love, love, love the crunch of these cookies! The only unfortunate part for me is I forgot to buy a lemon and I had in the fridge this powdered california lemon peel from Penzeys. Didn't like it. It taste like I put the pith of a lemon in the cookies versus the rind. So, there's a little bitterness at the end. Bummer. But this is definitely a keeper... aren't they all? Unfortunately, I didn't read the recipe until this morning before I left for work and I didn't get home from work until after 8 p.m. My tart is a work in progress. One note that I made on this recipe is not to make a double crust in my food processor. It's a 7 cup processor and one batch is plenty in there! My dough came out over processed. We'll see how it bakes up.
I used Pink Ladies for the apples. I loved one persons comment on how this tart reminded them of McDonalds apple pie! If that's the case, my husband will devour it! I'll have to wait til tomorrow to find out! Thanks Jeanette from Whimsical Cupcake for the treat!
